Paneer Do Pyaza

Once a week I have to make paneer at home and then a paneer dish since paneer isn't available here.Everytime i want to make delicious restaurant style paneer dishes because paneer is something special for a vegeterian.
When i saw this paneer do pyaza recipe for the first time,i thought i could find another better recipe for paneer and ignored it. But every week i needed a new paneer recipe and i was already bored of "Paneer Butter Masala(my fav)",palak paneer,matar paneer etc. So one day i had to try this.The result was so good that i have made this numerous times now and added it to my paneer favourites now. If you want to try a new and special paneer dish, this is the one. Its perfect for any occasion and can be served with parathas or rice.I just never thought it could be such a special dish.




But do you know why is it called so?
There are several reasons why a dish is called "Do Pyaza" meaning "two onions".
1.One reason says that the weight of the onion is twice that of the paneer.
2.Another reason is that only two onions are used. 
3.But the most practical theory is that the onions are used in two different forms -raw and fried.The raw onions are slowly cooked in the gravy, enhancing the flavor. The fried onions, added toward the end boost the color of the dish, adding a caramelized sweetness. 





Ingredients
Cottage cheese (Paneer)         500 gms
Onions ,cut into quarters         2 medium
Onions,cut into slices              2 medium
Onion, fried                           1/2 cup
Oil                                        4 tbsp
Cumin seeds                          1 tbsp
Green Cardamoms,crushed        5
Garlic paste                           1 tbsp
Ginger paste                          1 tbsp
Tomatoes, chopped                 2 medium
Tomato puree                         1/4 cup
Turmeric powder                     1/4 tsp
Coriander powder                    1 tbsp
Cumin powder                         1 tsp
Red chilli powder                     1 tsp
Fresh Cream                           1/2 cup
Salt                                       to taste
Garam masala powder               1 tsp
Fresh coriander leaves              1/4 cup


Method
Heat oil in a wok or karahi and fry the quartered onions till golden.Keep Aside
Heat oil in another deep pan. Add cumin seeds,green cardamoms and the 2 sliced onions. Saute till onions till golden.Add ginger paste and garlic paste to the onions. Saute and add 2 tbsp water.mix well.
Add the tomatoes and tomato puree and mix. Add turmeric powder,coriander powder,cumin powder and red chilli powder.mix well and cook till the oil separates. Add the cream and mix well with the gravy.
Now add the salt ,garam masala powder,the quartered onion pcs and 1/2 cup fried onions.Mix well. Add the paneer pieces.Mix and garnish with coriander leaves.
